I think say is better here than said. It is clear that those present are the subject, but I feel it applies more broadly as a custom as well.

"Chanza", según la RAE, es "un dicho festivo y gracioso" o "un hecho burlesco para recrear el ánimo o ejercitar el ingenio". Por otro lado, "en son de" significa "con ánimo de" o "con la intención de"
