'Arboles de copa flechados' are trees with pyramid shaped crowns
'Refaldado' refers to pruning the tree to raise (or lift) the crown of the tree by removing the lower branches.

Types of tree canopy

See the link below with an explanation of the basic types of tree canopies. I'm thinking that "flechado" may refer to the vase type.
