So, your own suggestion "LIST OF PHARMACEUTICAL PRODUCTS IN PROCESS" is what I would use. Without a hyphen.

RE: Since I don't see any mention of "approval" in the source text, I don't feel I can wholeheartedly agree with the suggestion that it means the same as "pending approval". Although, having said that, it probably does refer to an approval process, even though it is not stated in black-and-white.
Organisations may miss out on products in process.

: Yes, but "in process" of what? In my view, "en trámite" is just short for "en trámite de registro o aprobación".
