eels The original Flemish name for the dish is "Paling op t groen" (eels on/at the green) which was rather faithfully translated in French "anguilles au vert"; But in English "eels in green herb sauce" is the most common translation. BTW, these are plump river eels which have a firm white flesh and excellent texture and this dish is FABULOUS!

eel in a green herb sauce

Hello,

I never had it, but I'm not sure I ever do. LOL

I hope this helps.

agree Jill Ananyi : I think I would say Eels in Green Herb Sauce, although one can also just say Eels in Green Sauce.

Thanks, Jill! I didn't know if we'd pluralize it or not as the French does.
agree Kate Hudson (X) : http://gloriousfoodandwinerestaurants.blogspot.com/2007/05/m... I'd go for eel in ....

Thanks, Kate!
agree B D Finch : Somehow eels make me think slime and "jellied". So keeping it singular is somehow more appetising.

Thanks, B D. That's what I was thinking, too. LOL. You made me laugh there.
agree French Foodie : I'd keep it singular as well

Thanks, jean-jacques!
agree emiledgar : Here in Brussels (where the dish originated) one sees "Eels in green herb sauce" on the translated menus.

Thanks, emiledgar! It just sounds really strange to me in the singular, but the whole dish does...LOL
agree Ingeborg Gowans (X) : seems to be known in Northern Germany as well, esp. in Hamburg

Thanks, Ingeborg!
agree Rachel Fell : plural (eels) and no "a" (article) for me - http://en.wikipedia.org/wiki/Escape_to_River_Cottage

Thanks, Rachel! It just sounds a little to weird to me in the plural, but I never heard of the dish before. LOL.
agree Carol Gullidge : singular, and eels really are delicious, with a nice firm texture, and not in the least slimy :)

Thanks, Carole! I'm still not sure I would to give them a go. LOL.

eel with bay and cardamom

To my mind just sounds a bit better than the general "herbs" description. I agree that green eels sounds revolting in any language!

eels in the green

How I'd think of it

Another Belgian specialty is "Eels in the green", if you like fish. Drink beer.
