It is perhaps of interest that those in the EU institutions have recently turned their collective minds to defining “liberal professions”, which are, according to the Directive on Recognition of Professional Qualifications (2005/36/EC) “those practised on the basis of relevant professional qualifications in a personal, responsible and professionally independent capacity by those providing intellectual and conceptual services in the interest of the client and the public”.

The examples given by the asker seem to fit the EU concept of "liberal professions", and this may well be what the text is referring to, but I would say that normal Norwegian usage of "frie yrker" is much broader than that - much more along the lines of self-employed

Terms commonly used in Canada for such careers, whether or not one is self-employed (you might be on staff at an organization such as a hospital, army, company, etc.); you need to be licensed by a federal or provincial accreditation body in that field in order to be able to use the title(s) of doctor, accountant, lawyer, architect, engineer, nurse, psychologist, and so on.
