I found 'hobby-horse' as a translation for this concept, meaning 'a subject or idea on which you have strong feelings and which you like talking about whenever you have the opportunity'. But in the context, the term seems to mean more than that... it refers to something which you use because it is useful, and which you know will work well or be effective because you use it constantly for that purpose... any ideas?

I recall a piece where the word was used pretty much in the same context as in your text. It is in the album liner notes of an album of Bach´s organ favorites performed by E. Power Biggs. The critic, referring to the Toccata and Fugue in D Minor, writes something like:
\"No collection of Bach´s organ work would be complete without this noble, and apparently immortal workhorse.\"
