I need help with formatting while translating a university transcript into Japanese. What are some "easy" ways to extract and manage text from a PDF with lots of charts and rows?

Working on a Japanese/Chinese poetry handbook, Japanese to English, six volumes, 3,000+ per volume. After this I'm gonna need some green tea and a cookie!
