The last part should be tailored to fit the rest of what I suppose is a critique of the film about a woman, her husband, her lover and high cuisine. The "tres bandas" refers to the romantic triangle.

Given the plot of the film I might translate the phrase as "a love triangle/three people who can't seem to get their act together in or out of the kitchen..."

unable to find the right tone for the mix
The simplest translation, changing the least, and I think the best one. An alternative for "tone" would be "key" since "tono mayor/menor" is translated as "major/minor key" but, unless the musical reference is obvious from the context, I think "tone" will work better. Of course "incapaz" refers to the author.
