I am actually a liquor producer (www.jaddess.com) and have not come across a liquor making process that uses lime.
On the other hand there is a tanning process that uses liming liquor (see http://www.freepatentsonline.com/4310328.html) and it is also part of the sugar refining process.
Are you sure the material you are translating is about making a beverage?

Like Jonathan, I am not familiar with liming in the beverage industry (am not a liquor maker...), but if it's used in sugar refining process, then it may make some remote sugar/alcohol sense.
