Cold expression:
- Extraction of essential oil from peel: one of the first processes of extraction. The skins of the fruits were rubbed against surfaces covered with metal spikes to make the tissues containing the essential oil burst
Then the metal spikes were replaced by natural sponges which were then squeezed out.
Nowadays, cold expression is carried out by decantation in water, the essential oil separating from the water.
- Extraction from whole fruits: The essential oil is extracted at the same time as the juice.
- Expression is a simple technique where the skins of citrus fruits are cold pressed to extract their essential oil using rolls or sponges. No heat technique is used so the oil retains a scent very close to the original. In ancient Egypt, the flowers were placed in a fabric bag which was then pressed and folded until the oil dripped out.
